I'm on the no-gluten diet, and one of the substitutes I use, Xanthan Gum, is *incredibly* elastic & would probably work with a chocolate fruit leather. It gums up awfully fast though, so get the mixture blended first and then put in maybe 1/8 teaspoon of the Xanthan gum into the blender.
